Frequently Asked Questions

Bean to bar chocolate describes someone who makes chocolate starting with raw cocoa beans and ends with finished chocolate bars.

Chocolate makers start with raw cocoa beans to make chocolate. Chocolatiers start with pre-made chocolate to make chocolate bars and confections.

The percent listed on a chocolate tells you what percentage of the recipe is made from cocoa beans, cocoa powder and cocoa butter. An example is our 80% chocolate which is 80% cocoa beans and 20% sugar.

We use certified organic cane sugar. Our sugar meets vegan standards as no bone char is used in processing.

Our chocolate is not certified organic but we use certified organic cocoa beans, organic cane sugar, organic cocoa butter and source organic ingredients for our flavored chocolate when possible.

We are not certified Fair Trade but many of our cocoa beans are certified Fair Trade and we pay above Fair Trade prices for our cocoa beans. We work on what is called a Direct Trade model so we source cocoa beans directly from farms, co-ops and their shipping channels. This relationship means the premiums we pay create a fair living wage for the farms and co-ops and we in turn receive high quality and ethically produced cocoa beans.

There are two main reasons our chocolate cost more. First, we believe the highest quality cocoa beans and sugar will create the best tasting chocolate possible. Second, we also believe in paying people what they are worth. This means a fair living wage for the farmers and our chocolate makers in Cincinnati. None of this is possible without a higher price tag.
